Zucchini Pineapple Bread


Beat 3 eggs until blended and frothy.

Add 1 cup oil

2 cups sugar and

2 tsp vanilla

Beat until thick and creamy.

Stir in: 2 cups coarsley shredded zucchini and 1 8 oz can of well drained

crushed pineapple.

Combine 3 cups flour, 2 tsp. baking soda, 1 tsp salt 1/2 tsp.baking powder,

1 1/2 tsp. cinnamon, 3/4 tsp. nutmeg

add to above mixture

1 cup finely chopped nuts

1 cup white raisins,black will do also

Stir gently into mixture just to blend

grease and flour loaf pans well

Bake at 325* for 1 hour 10 min.

Leave in pan 15 minutes before removing

 This will make 2 large loaves.
